  • 4 cloves garlic roughly chopped
  • 1/2" piece fresh ginger
  • 8oz jar mango chutney
  • zest and juice of one orange preferably cara cara variety
  • 1/2 tsp rice vinegar
  • 1/2 tsp garam masala*
  • 1/4 cup light brown sugar
  • salt to taste
  • black pepper to taste


  • Blitz all the ingredients in a food processor, then taste for seasoning and adjust according to your palate.
  • To use: cook the ham according to package instructions, but drizzle over the ham before cooking. Save some to serve on the side.


*Garam masala is an Indian spice blend, which means “warm spice mix”. It’s a combination of cinnamon, cloves, cardamom and some other similar spices. You can usually find it at the grocery store, but if you don’t have it, use a few pinches of ground cinnamon and cloves, or pumpkin pie spice.
