Bacon and Beer Cheese Soup
This one’s for all the adults out there! Time to get your favorite bacon, your favorite cheese, and your favorite beer, and combine them to create this delicious Bacon and Beer Cheese Soup recipe!
Recipe Tip: The predominant flavor of this soup is the beer! So make sure you choose this ingredient wisely. If you don’t like the beer, you probably won’t like the soup so make sure to use something you love!

Bacon and Beer Cheese Soup
Ingredients
- 1 pack Wellshire Maple Bacon chopped
- 1/3 cup onion chopped
- 1/3 cup all-purpose flour
- 1/2 tsp dry mustard
- 1/2 tsp thyme leaves
- 1 32oz box chicken broth
- 1 bag refrigerated hash brown potatoes diced or shredded
- 1 12oz bottle of your favorite beer not a dark beer
- 1 cup heavy cream
- 1 8oz bag of shredded sharp cheddar cheese
- 1 8oz bag of shredded white cheddar cheese
Instructions
- Cook bacon in a Dutch oven or stock pot over medium heat, until it reaches your preferred level of crispiness. Remove bacon from pot to drain on paper towels, reserving several tablespoons of grease in the pan.
- Add onions to bacon grease, cooking until the onion is tender and translucent.
- Stir in flour, mustard, and thyme - this will be thick.
- Add full box of chicken broth. Stir until hot and bubbly.
- Add potatoes and beer. Bring to boiling, then reduce the heat. Simmer for 5 minutes.
- Stir in cream and heat through.
- Add cheeses, gradually. Stir after each addition until the cheese is melted.
- Stir in at least half of the bacon into the soup. Reserve the rest for topping.
