Bacon Cheddar Irish Soda Bread
Wellshire Irish Loin Bacon is back! Which means it’s time to bake some Bacon Cheddar Irish Soda Bread! Also, St. Patrick’s Day is perfect time to do so! This one is packed with flavor, and full of the bacon and cheese you love! Bread is a great side dish on any occasion, but especially for upcoming holidays!

Bacon Cheddar Irish Soda Bread
Ingredients
- 1 package Wellshire Irish Loin Bacon
- 1 cup All-purpose flour
- 1 cup Bread flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon granulated sugar
- 2 oz Irish cheddar cheese cubed
- 3/4 cup buttermilk
Instructions
- Preheat oven to 400F.
- Line a baking pan with parchment or a silicone baking mat. Rub a little flour on the spot where you will be placing the dough.
- Cook Irish Loin bacon according to your favorite method, chop, and set aside.
- Sift or whisk together all dry ingredients in a bowl.
- Add Irish bacon and cheese to flour mixture. Resist the temptation to add more cheese than what the recipe calls for.
- Add buttermilk and mix well.
- Knead the dough with your hands for 1-2 minutes. The dough should be wet/sticky and hold together.
- Form the dough into a round shaped loaf and place it on the floured section of your baking pan.
- Score the dough fairly deeply in a cross shape on the top of the loaf.
- Bake for 22-25 minutes. You’ll know the bread is done when it’s lightly browned on top, and sounds hollow if you tap it on the bottom of the loaf.
