Bacon & Potato Quiche
Try this no crust Bacon & Potato Quiche that will have the whole family coming back for more!

Bacon & Potato Quiche
Ingredients
- 1 tbsp butter
- 1/2 bag diced potatoes
- 1 white onion chopped
- 1 red pepper chopped
- salt pinch
- black pepper pinch
- 8 Wellshire Sugar Free Paleo Dry Rubbed Bacon
- 8 eggs
- 1/4 cup half & half
- parsley chopped, optional
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F.
- On medium heat in a nonstick pan, melt butter. Add diced potatoes and cook for about 6 minutes. Add onion and red pepper and cook for another 3 minutes. Add salt and pepper to taste.
- Set nonstick pan aside to cool. In another nonstick pan, cook bacon until brown on each side. Drain bacon and chop into pieces. Set aside in a bowl. Coat separate skillet or oven safe cooking dish with butter. Set aside for later.
- In a bowl, whisk eggs, half & half and parsley (optional) together. Add salt and pepper to taste.
- In coated skillet/oven safe cooking dish, add potato mixture and bacon (set some bacon aside for top). Pour the egg mixture over top and sprinkle cheddar cheese and remaining bacon on top of eggs.
- Place skillet/oven safe cooking dish in the oven for 25 minutes or until the eggs are cooked and the top is slightly brown.
- Remove from oven and let cool before serving. Sprinkle some parsley on top for garnish and enjoy!
