Bacon-Wrapped Spiced Pumpkin and Butternut Squash
We’re still obsessing over that perfect pumpkin flavor in the midst of October, but we’re switching it up a little this week and making a side dish with fresh pumpkin! This time of the year a lot of us are visiting apple orchards and pumpkin patches, enjoying the weather and the fun fall activities that go along with it. (Hay ride or corn maze anyone?) Pumpkins seem to be popping up everywhere – it is pumpkin carving season after all! If you’re heading to a pumpkin patch soon or planning on carving pumpkins with your own family, grab an extra pumpkin so you can have a delicious snack to go along with the family fun!
We chose to use a combination of pumpkin and butternut squash when we made this recipe, and both were great options! We also highly recommend using our new Wellshire Maple Bourbon Bacon when you’re considering what bacon to use! The hints of maple bourbon in the bacon go together so well with the spices – this particular bacon brings out the pumpkin and squash flavors for a taste you’ll be craving!
This recipe also calls for a little bit of chaos, we all know pumpkins are a bit messy! But we have a feeling your family will have a blast, especially the kiddos! Sometimes we all need to get our hands dirty, and a little mess never hurt anyone! Just be sure to put down newspaper or a plastic covering before digging into those pumpkins. Now it’s your turn, the pumpkins (and bacon) are calling!

Bacon-Wrapped Spiced Pumpkin and Butternut Squash
Ingredients
- 1 package Wellshire Maple Bourbon Bacon can substitute other Wellshire Thick-Sliced Bacons if desired
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp rosemary
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 1/2 lbs pumpkin and/or butternut squash (peeled, seeded, and cut into 2" chunks)
Instructions
- Preheat oven to 350°F. Place a wire rack in a rimmed baking sheet (line your baking sheet with foil to make clean up easier if desired).
- In a mixing bowl, mix together ginger, cinnamon, rosemary, olive oil, and maple syrup. Add the pumpkin and/or butternut squash to the mixture, toss together until all of the pieces are covered.
- Cut the bacon sliced in half.
- Wrap each spiced pumpkin and/or butternut squash in a half slice of bacon. Place on the wire rack so that the ends of the bacon slice are on the bottom (this stops them from unraveling while cooking).
- Using a spoon, drizzle any remaining spice mixture over the top of each bacon-wrapped piece of pumpkin and/or butternut squash.
- Bake for 40 minutes. Remove from the oven and serve!
