Baked Mashed Potatoes

Mashed potatoes is a stable side dish around the holidays. This year, try making Baked Mashed Potatoes instead (or in addition)! It’s not only a mouthful of delicious creamy potatoes, but also contains bacon and Parmesan cheese! The more bacon, the merrier!

Baked Mashed Potatoes
Ingredients
- 8 potatoes peeled and chopped
- 1 cup milk
- 1/2 cup butter melted
- salt to taste
- black pepper to taste
- 1/2 cup Parmesan cheese
- 2 1/2 tbsp plain breadcrumbs
- Wellshire Thick Sliced Bacon chopped and cooked
Instructions
- Preheat oven to 400°F.
- Boil potatoes in a large pot until softened, for about 12 minutes. Drain the water and mash the potatoes until smooth.
- Add milk and butter and mix well. Season with salt and pepper.
- Pour mashed potatoes into a greased baking dish.
- Mix together Parmesan cheese, breadcrumbs, and cooked, chopped bacon in a small dish. Sprinkle this over the mashed potatoes evenly.
- Bake for 20 minutes, or until edges start to crisp and brown. Dish out and enjoy!
