Candied Bacon Chocolate Chip Cookies

Ingredients
  

  • 2 packages Wellshire Bacon Bits
  • brown sugar as much as needed to coat bacon bits
  • 12oz bread flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 8oz melted unsalted butter
  • 2oz sugar about 1/4 cup
  • 8oz brown sugar about 1 cup
  • 2 tbsp whole milk
  • 1 large egg
  • 1 large egg yolk
  • 1.5 tsp vanilla extract
  • 12oz semisweet chocolate chips or whatever chocolate chips you prefer

Instructions
 

Candy the Bacon

  • Spread the bacon bits over a foil covered baking sheet.
  • Cover the bacon bits with a thin layer of brown sugar.
  • Bake for 12 minutes at 425°F. Watch carefully after minute 10, as this can burn quickly! Let cool.

Make the Cookie Dough

  • Mix together the flour, baking soda, and salt in a bowl. Set aside.
  • Cream together the melted butter and sugars with a mixer.
  • Whisk together the milk, egg, egg yolk, and vanilla extract.
  • Add the egg mixture to the butter and sugar. Mix until thoroughly combined.
  • Add the flour to the wet ingredients gradually, mixing until well incorporated.
  • Add the chocolate chips and the candied bacon bits. Mix together by hand.
  • Chill the dough for one hour.
  • Heat oven to 375°F. Line cookie sheet with parchment paper.
  • Scoop out the dough, with your favorite cookie scoop, onto the cookie sheets.
  • Bake sheets 2 at a time for 15 minutes, rotating the pans at the half-way point.
  • Transfer parchment sheets to a cooling rack for at least 5 minutes before eating.
