Ham and Cheese Waffles

Ingredients
  

  • 2 eggs separated
  • 3/4 cup buttermilk +2 tablespoons
  • 4 tbsp unsalted butter
  • 3/4 cup all-purpose flour +2 tablespoons
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 2 tbsp granulated sugar
  • 2 tbsp fresh parsley finely chopped
  • 1 tbsp fresh sage finely chopped
  • 1 tsp fresh rosemary finely chopped

Topping

  • 1 slice Wellshire Tavern Ham
  • pinch shredded Gruyére cheese

Instructions
 

  • Preheat waffle maker to medium-high heat and oven to 200°F.
  • In large bowl, whisk together egg yolks, buttermilk and butter.
  • In separate bowl, stir together flour, baking powder, baking soda, salt and sugar. Whisk flour mixture into buttermilk mixture.
  • In a small bowl, whisk egg whites until soft peaks form.
  • Using rubber spatula, fold egg whites, parsley, sage and rosemary into buttermilk mixture until just combined.
  • Cook small batches of waffles until golden brown. Keep warm in the oven on a baking sheet.
  • Top waffles with ham slices and sprinkle with cheese on baking sheet. Cook until the cheese is fully melted and serve immediately.
