Mini Ham Frittata with Cheese
Start your day with a healthy breakfast. These mini frittatas with ham and cheese are great fresh out of the oven or reheated in a flash for those mornings when you have to grab-and-go!

Mini Ham Frittata with Cheese
Ingredients
- 1/2 cup onion chopped
- 2/3 cup Wellshire Virginia Honey Ham Nugget chopped
- 1/3 cup shredded cheddar cheese
- 2 tbsp fresh chives chopped
- 1/8 tsp dried thyme
- 1/8 tsp black pepper
- 4 large egg whites
- 1 large egg
Instructions
- Preheat oven to 350°F.
- Sauté onion 2 minutes over medium-high heat in a large non-stick skillet or until crisp-tender.
- Add ham. Cook for 3 more minutes. Remove from heat and let cool 5 minutes.
- Combine remaining ingredients in a large bowl and stir with a whisk.
- Add ham mixture and stir again.
- Spoon mixture into 24 miniature muffin cups coated with cooking spray.
- Bake for 20 minutes or until set.
