Pancetta Fig Gorgonzola Pizza

It’s time to mix it up for Pizza Night! Everyone loves a good pizza, but it’s also fun to try something new! We made a Keto pizza (cauliflower crust is the greatest!) recently that has mozzarella cheese and pizza sauce, but is also topped with figs, Gorgonzola cheese, and Colameco’s Diced Pancetta. These added flavors combine to create a unique taste that will leave your family wanting more! We definitely loved it at the office and couldn’t wait to share with you!

Pancetta Fig Gorgonzola Pizza

Ingredients
  

  • cauliflower pizza crust
  • extra-virgin olive oil
  • pizza sauce of your choice
  • 8 fresh figs quarter them
  • 5oz Colameco's Diced Pancetta
  • 2oz Gorgonzola Cheese
  • 2 cups shredded Mozzarella cheese
  • salt
  • black pepper

Instructions
 

  • Preheat oven to 450°F.
  • Prepare pizza crust per instructions or recipe.
  • Drizzle with extra virgin olive oil.
  • Top with a few tablespoons of your favorite pizza sauce.
  • Arrange Figs, Pancetta, and Gorgonzola over crust.
  • Top with mozzarella. Finish with a sprinkle of salt and a few grinds of black pepper.
  • Bake for 7-10 minutes.
