Pork Tasso Jambalaya

Pork Tasso Jambalaya
Ingredients
- 2 tbsp olive oil
- 1 red pepper minced
- 1 orange pepper minced
- 2 cups onion chopped
- 1 cup celery chopped
- 1 package Wellshire Pork Tasso Ham
- 2 tbsp garlic chopped
- 3 bay leaves
- 6oz canned tomatoes
- 1 can tomato paste
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp black pepper
- salt to taste
- 3 cups water
- 1 cup long grain white rice
Instructions
- In a large skillet with olive oil, sauté peppers, onions, and celery until tender on low to medium heat.
- On a large cutting board, cut Pork Tasso into bite sized chunks and add to the skillet.
- Stir in the garlic, bay leaves, tomatoes, and tomato paste. Season with cayenne, paprika, black pepper, and salt to taste. Continue to stir and mash down the tomatoes.
- In a medium pot, bring water to a boil and cook the rice until al dente. Strain and add the Jambalaya.
- Cook on low for 25 mins, stirring occasionally until thick and serve.
