Pork Tasso Jambalaya

Pork Tasso Jambalaya

Ingredients
  

  • 2 tbsp olive oil
  • 1 red pepper minced
  • 1 orange pepper minced
  • 2 cups onion chopped
  • 1 cup celery chopped
  • 1 package Wellshire Pork Tasso Ham
  • 2 tbsp garlic chopped
  • 3 bay leaves
  • 6oz canned tomatoes
  • 1 can tomato paste
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp black pepper
  • salt to taste
  • 3 cups water
  • 1 cup long grain white rice

Instructions
 

  • In a large skillet with olive oil, sauté peppers, onions, and celery until tender on low to medium heat.
  • On a large cutting board, cut Pork Tasso into bite sized chunks and add to the skillet.
  • Stir in the garlic, bay leaves, tomatoes, and tomato paste. Season with cayenne, paprika, black pepper, and salt to taste. Continue to stir and mash down the tomatoes.
  • In a medium pot, bring water to a boil and cook the rice until al dente. Strain and add the Jambalaya.
  • Cook on low for 25 mins, stirring occasionally until thick and serve.
