Pumpkin Soup with Bacon (Two Ways!)

It’s officially time to celebrate the new season, fall is here! Which means changing leaves, apple picking, pumpkin patches, and chilly evenings are ahead. We can’t think of anything cozier than warming up on a brisk autumn night with a steaming bowl of delicious soup! And not just any soup, but pumpkin soup! Because we’re still on the pumpkin train – I’m not sure we’ll ever get over that perfect pumpkin taste!

This recipe is simple, and doesn’t take all day to make, which is important for busy families! We also realize everyone has taste preferences, so we’re giving you not one, but two pumpkin soup options. A Spicy Pumpkin Soup for a kick of heat, or a Sweet Pumpkin Soup for a more traditional flavor. Whichever taste you’re craving, bacon is the key ingredient to make these soups a hit. We used our new Maple Bourbon Bacon in our recipes – it’s a perfect pairing for either soup option and a flavor that was made just for fall. Happy slurping, and Happy Fall!

Ingredients
  

Spicy Pumpkin Soup

  • 1 package Wellshire Maple Bourbon Bacon chopped
  • 1 large yellow onion diced
  • 2 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 1 can 100% pure pumpkin
  • 1 cup no sugar added applesauce
  • 1 1/2 tsp ground ginger
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1/4 cup plain Greek yogurt optional

Sweet Pumpkin Soup

  • 1 package Wellshire Maple Bourbon Bacon chopped
  • 1 large Vidalia onion diced
  • 2 cloves garlic minced
  • 4 cups low-sodium vegetable broth
  • 1 can 100% pure pumpkin
  • 1 cup no sugar added applesauce
  • 1 1/2 tsp ground ginger
  • 1 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 cup brown sugar
  • 1/4 cup plain Greek yogurt optional

Instructions
 

Spicy Pumpkin Soup

  • In a pot, cook the chopped bacon over medium heat. Drain bacon on a paper towel and set aside. Leave 2 teaspoons of bacon grease in pot.
  • Add onion to the pot and saute onion over medium-high heat until softened, about 7 minutes. Add garlic and stir constantly for 30 seconds.
  • Stir in broth, pumpkin, applesauce, ginger, paprika, salt, pepper, and cayenne pepper. Stir well to completely combine. Bring to a boil. Reduce heat to low and simmer for 5-10 minutes, stirring occasionally.
  • Remove from heat and stir in Greet yogurt (if desired). Serve in bowls and sprinkle with cooked bacon. Enjoy!

Sweet Pumpkin Soup

  • Remove from heat and stir in Greet yogurt (if desired). Serve in bowls and sprinkle with cooked bacon. Enjoy!
