  1. In a large skillet with olive oil, sauté peppers, onions, and celery until tender on low to medium heat.
  2. On a large cutting board, cut Pork Tasso into bite sized chunks and add to the skillet.
  3. Stir in the garlic, bay leaves, tomatoes, and tomato paste. Season with cayenne, paprika, black pepper, and salt to taste. Continue to stir and mash down the tomatoes.
  4. In a medium pot, bring water to a boil and cook the rice until al dente. Strain and add the Jambalaya.
  5. Cook on low for 25 mins, stirring occasionally until thick and serve.
