Sweet Potato Turkey Bacon Chowder

Happy November! As always, we’re looking forward to Thanksgiving at the end of the month, a day full of our favorite recipes. We’re not waiting to celebrate though! This month we’re going to be sharing with you some recipes that include Wellshire turkey products! It’s the perfect way to enjoy turkey all month long.

This turkey recipe is for anyone who’s craving some warmth or still in the mood for fall flavors. Or for anyone who likes delicious food in general! This Sweet Potato Turkey Bacon Chowder is perfect for chilly nights at home with your family. Colder weather is coming in fast and most of us are looking for ways to keep the chill out. This chowder is a great way to do just that! Even though winter is approaching, there’s still time left to enjoy those beloved fall flavors. Also, this isn’t a complicated or time consuming recipe! We can’t wait for you to try it out for yourself!

Instructions
  1. Cook turkey bacon in a pan to desired crispness. Reserve any grease in the bottom of the pan.
  2. Add olive oil to bacon grease.
  3. Add onions, carrots, and celery to a large soup pot. Cook for about 4 minutes or until vegetables begin to soften. Add garlic and let cook for another minute or so.
  4. Add chicken broth, sweet potatoes, bay leaf, and thyme. Bring all to a boil and then cover. Bring the heat down to simmer. Leave for 12-15 minutes or until the potatoes have softened. Remove bay leaf if desired.
  5. Using an immersion blender, blend the soup until it has the consistency that you like. (A blender will also work if you don't have an immersion blender. Blend, puree, and then put back into the pot.)
  6. Next add the kale or spinach and cook until the leaves are wilted. Add whipping cream, and salt and pepper to taste.
  7. Top with turkey bacon and dig in!
