Instructions
  1. Preheat oven to 375 degrees and grease a small round baking dish.
  2. Cook the turkey bacon and set aside to cool and drain on a paper towel.
  3. Saute mushrooms, onions, and kale in olive oil until they begin to soften. Add in the garlic. Continue cooking until everything is softened.
  4. Stir the rice, sautéed mixture, 4 tbsp almonds and half the Parmesan cheese in a large bowl. Add half of the bacon and mix in.
  5. Whisk the eggs, milk, salt, and pepper together. Then fold the egg mixture into the rice mixture.
  6. Pour into the baking dish and sprinkle with the rest of the cheese, 1 Tablespoon of sliced almonds, and the remainder of the bacon.
  7. Bake for about 30 minutes. Poke with a knife or fork in the center to make sure the egg mixture is cooked through.
