Preheat oven to 375 degrees and grease a small round baking dish.
Cook the turkey bacon and set aside to cook and drain on a paper towel. Sautee veggies (minus garlic) until they begin to soften.
4. Add in the garlic. Continue cooking until everything is softened. Stir the rice, mushroom mixture, 4 tbsp almonds and half the cheese in a large bowl. After whisk the eggs, milk, ½ teaspoon salt and pepper, fold the egg mixture into the rice mixture. Pour into the baking dish and sprinkle with the rest of the cheese and 1 Tablespoon of sliced almonds. Bake for about 30 minutes. Poke with a knife or fork in the center to make sure the egg mixture is cooked through.
