Turkey Bacon Cheeseburger Soup
Instructions
  1. Bake turkey bacon on parchment-lined baking sheet according to package directions. Once cooked, chop the bacon.
  2. In a large soup pot or dutch oven, add the ground turkey to medium-high heat along with salt and pepper to taste.
  3. Break down the ground turkey. Cook for 3-4 minutes until it browns and is no longer pink. Drain the excess fat and set the cooked ground turkey aside.
  4. Add butter and diced onions to the pot. Cook until onions are translucent, and the butter melts.
  5. Next add the chicken broth, cauliflower, garlic powder, Italian seasoning, and ground mustard. Stir together. Cover the pot and reduce the heat to medium. Cook for 15 minutes. The cauliflower should be soft and tender.
  6. Uncover the pot and add the cooked ground beef, along with heavy cream, cream cheese, and shredded cheddar. Mix together.
  7. Add half of the chopped turkey bacon to the soup.
  8. Once served, top with the remaining turkey bacon and any other burger toppings that you like!
