Roasted Acorn Squash
There are so many different kinds of squash to try out this fall season! For this recipe, we’re using acorn squash! Try this Roasted Acorn Squash for a delicious new alternative at your dinner table! This one comes topped with lots of Wellshire Bacon Bits, sure to make your whole family’s taste buds happy!

Roasted Acorn Squash
Ingredients
- 4 tbsp olive oil divided
- Himalayan salt
- lemon pepper
- 1 acorn squash halved, seeded, and cut into thick wedges
- 1 tbsp dried herbs thyme leaves, Italian seasoning
- 1 tbsp lemon juice
- 1/2 package Wellshire Bacon Bits
- 1 tsp freshly chopped chives optional
Instructions
- Preheat oven to 450°F.
- Combine 2 tablespoons olive oil, salt and lemon pepper.
- Toss wedges of squash in the olive oil mixture.
- Place on baking pan and roast till fork tender, about 25 minutes.
- Remove from oven when done and set aside to cool slightly.
- Meanwhile, mix remaining 2 tablespoons olive oil with dried herbs and lemon juice. Place squash on serving plate. Sprinkle bacon bits over the squash.
- Drizzle squash and bacon with herbed olive oil. Add chives if desired. Serve warm.
