  • 1 tbsp olive oil
  • 4 garlic cloves
  • 1 package spinach
  • 1 package kale
  • 1/2 cup fresh basil
  • 1/2 tsp Italian seasoning
  • salt to taste
  • black pepper to taste
  • 1 package Wellshire Turkey Andouille Sausage sliced
  • 1 1/2 cups mozzarella cheese, shredded
  • 4-6 fresh peppers cut in half and cleaned
  • 1/2 cup shredded Parmesan cheese


  • Preheat oven to 330°F.
  • In a large skillet on low to medium heat, sauté oil and garlic for a minute. Add spinach, kale, and basil and lower heat.
  • Season with Italian seasoning, salt, and pepper. On a cutting board, slice sausage into thin slices; set aside.
  • Mix together spinach mixture, cheese, and sausage together in a large bowl.
  • Wash and slice the peppers in half, remove stems and seeds.
  • Stuff the spinach mix into the peppers and line in a greased casserole dish. Bake in the oven for about 10-12 minutes.
  • Top with Parmesan cheese and extra sausage!
