Spiced Chai Pumpkin Pancakes

Anyone else ready for fall!? Here at Wellshire the air is starting to cool and the leaves are just starting to change. Which means it’s time for bonfires, cozy sweaters, and most importantly, pumpkin! There’s no limit to what foods people are making with pumpkin these days and we are on board to try them all!

We decided to make some pumpkin pancakes! And not only that, but we added some spiced Chai flavoring into the mix to fully embrace that fall feeling. It’s a perfect way to start your morning, or end your day with warm breakfast for dinner!

Wellshire has also recently launched a new specialty craft bacon that we’re so excited about: Maple Bourbon Bacon! The new thick-cut bacon features rich, seasonal flavors like maple sugar and salted bourbon, a perfect combination of savory and sweet! We used this bacon in our pancake recipe. Can’t have pancakes without maple syrup so the Maple Bourbon Bacon is a delicious addition! We hope you like the new bacon, and this fall recipe, just as much as we do!

Spiced Chai Pumpkin Pancakes

Ingredients
  

  • 1 egg
  • 1 cup Trader Joe's Spiced Chai Black Tea Concentrate do not dilute
  • 1/4 cup milk
  • 1 3/4 cups Trader Joe's Pumpkin Pancake & Waffle Mix
  • 1/4 cup Wellshire Maple Bourbon Bacon
  • your favorite maple syrup

Instructions
 

  • In a medium bowl, whisk egg, spiced chai concentrate, and milk until combined. Whisk in pancake mix until smooth. Let batter stand 5 minutes.
  • Heat oven to 400F. Place bacon on foil-lined cookie sheets. Bake about 15 minutes. Cut up the bacon into very small pieces.
  • Pre-heat a pan over medium. Working in batches, use a quarter-cup measuring cup to drop batter onto the pan. Sprinkle pieces of bacon onto the pancake.
  • Cook for 1-2 minutes, flipping pancakes when edges are no longer glossy and bubbles form in the center. Cook another minutes or so and transfer pancakes to a plate.
  • Serve pancakes with plenty of syrup for drizzling. And don't forget a side of Maple Bourbon Bacon!
