Sweet Potato Gnocchi
Sweet Potato Gnocchi is a great recipe to try during winter when you need to warm up at the end of a long day. We all need some warmth these days! However, we’re also looking for something easy and simple. This recipe won’t take you very long, but it’s delicious and packed with lots of great flavor!

Sweet Potato Gnocchi
Ingredients
- 1 package sweet potato gnocchi frozen
- 6 slices Wellshire Maple Bourbon Bacon chopped
- 1 tbsp minced garlic
- 1 tbsp thyme leaves fresh or dried
- 2 tbsp butter
- 1 1/2 cups frozen peas thawed
- sea salt to taste
- pepper to taste
- 2 tsp lemon juice
Instructions
- Prepare gnocchi according to package directions. Set aside when completed.
- Cook bacon in a large skillet over medium heat, until slightly crisp. Discard most of the bacon grease.
- Add garlic and thyme leaves, cook for about a minute.
- Add gnocchi (drained) to the pan. Stir in the butter until melted.
- Add peas, salt and pepper, and mix to combine. Squeeze lemon juice over the top and let the flavors meld. Serve hot!
