Turkey Bacon Brown Rice Bake
Ingredients
- 1 package Wellshire Classic Turkey Bacon
- 4oz mushrooms chopped
- 1 onion finely chopped
- 3 large kale leaves stemmed and chopped
- 2 tbsp olive oil
- 1 garlic clove
- 2 cups brown rice cooked
- 5 tbsp sliced almonds divided
- 1/2 cup grated Parmesan cheese
- 4 large eggs
- 1/4 cup whole milk
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F and grease a small round baking dish.
- Cook the turkey bacon and set aside to cool and drain on a paper towel.
- Sauté mushrooms, onion, and kale in olive oil until they begin to soften. Add in the garlic. Continue cooking until everything is softened.
- Add brown rice, 4 tbsp almonds, sautéed mixture, and half the Parmesan cheese to a large bowl. Stir together. Add half of the bacon and mix in.
- Whisk the eggs, milk, salt, and pepper together. Then fold the egg mixture into the rice mixture.
- Pour into the baking dish and sprinkle with the rest of the Parmesan cheese, 1 tablespoon of sliced almonds, and the remainder of the bacon.
- Bake for about 30 minutes. Poke with a knife or fork in the center to make sure the egg mixture is cooked through.
