Turkey Kielbasa Ratatouille

Take a classic ratatouille and dress it up with turkey kielbasa! It’s a great easy lunch option for busy Decembers!

  • 1 package Wellshire Turkey Kielbasa cut into slice on a bias
  • 1/2 cup onion chopped
  • 1 garlic clove minced
  • 1/2 small eggplant roughly chopped
  • 1 small zucchini sliced thin
  • 1 small yellow pepper roughly chopped
  • 1 medium tomato chopped
  • salt to taste
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • black pepper to taste
  • shredded Parmesan cheese optional


  • Add turkey kielbasa and onion to a large skillet over medium heat. Sauté until kielbasa starts to brown. Then stir in garlic.
  • Add eggplant, zucchini, and yellow pepper to the skillet. Mix together and leave on heat for another 5 minutes or until vegetables soften.
  • Mix in tomato. Add salt, basil, oregano and black pepper, making sure to stir spices in well. Remove from heat and serve. Sprinkle with cheese if desired.
