Turkey Kielbasa Ratatouille
Take a classic ratatouille and dress it up with turkey kielbasa! It’s a great easy lunch option for busy Decembers!

Turkey Kielbasa Ratatouille
Ingredients
- 1 package Wellshire Turkey Kielbasa cut into slice on a bias
- 1/2 cup onion chopped
- 1 garlic clove minced
- 1/2 small eggplant roughly chopped
- 1 small zucchini sliced thin
- 1 small yellow pepper roughly chopped
- 1 medium tomato chopped
- salt to taste
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- black pepper to taste
- shredded Parmesan cheese optional
Instructions
- Add turkey kielbasa and onion to a large skillet over medium heat. Sauté until kielbasa starts to brown. Then stir in garlic.
- Add eggplant, zucchini, and yellow pepper to the skillet. Mix together and leave on heat for another 5 minutes or until vegetables soften.
- Mix in tomato. Add salt, basil, oregano and black pepper, making sure to stir spices in well. Remove from heat and serve. Sprinkle with cheese if desired.
