  • 1 package sweet potato gnocchi frozen
  • 6 slices Wellshire Maple Bourbon Bacon chopped
  • 1 tbsp minced garlic
  • 1 tbsp thyme leaves fresh or dried
  • 2 tbsp butter
  • 1 1/2 cups frozen peas thawed
  • sea salt to taste
  • pepper to taste
  • 2 tsp lemon juice


  • Prepare gnocchi according to package directions. Set aside when completed.
  • Cook bacon in a large skillet over medium heat, until slightly crisp. Discard most of the bacon grease.
  • Add garlic and thyme leaves, cook for about a minute.
  • Add gnocchi (drained) to the pan. Stir in the butter until melted.
  • Add peas, salt and pepper, and mix to combine. Squeeze lemon juice over the top and let the flavors meld. Serve hot!
