  • 24oz riced cauliflower
  • 3 tbsp olive oil
  • sea salt
  • black pepper
  • 1 jar sugar-free marinara sauce
  • 2 cup Mozzarella Cheese (shredded)
  • sliced pepperoni
  • Wellshire Bacon Bits


  • Preheat the oven to 425°F.
  • In a 9x13 inch glass casserole dish, toss the cauliflower with olive oil, sea salt, and black pepper. Arrange evenly in a single layer and roast in the oven for about 25 minutes, until browned
  • Pour the marinara sauce over the cauliflower. Sprinkle with shredded cheese. Place pepperoni slices over the cheese. Sprinkle bacon bits on top.
  • Place casserole back in the oven for about 10 minutes, until the cheese is melted and golden.
