Turkey Bacon Brown Rice Bake

  • 1 package Wellshire Classic Turkey Bacon
  • 4oz mushrooms chopped
  • 1 onion finely chopped
  • 3 large kale leaves stemmed and chopped
  • 2 tbsp olive oil
  • 1 garlic clove
  • 2 cups brown rice cooked
  • 5 tbsp sliced almonds divided
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs
  • 1/4 cup whole milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper


  • Preheat oven to 375°F and grease a small round baking dish.
  • Cook the turkey bacon and set aside to cool and drain on a paper towel.
  • Sauté mushrooms, onion, and kale in olive oil until they begin to soften. Add in the garlic. Continue cooking until everything is softened.
  • Add brown rice, 4 tbsp almonds, sautéed mixture, and half the Parmesan cheese to a large bowl. Stir together. Add half of the bacon and mix in.
  • Whisk the eggs, milk, salt, and pepper together. Then fold the egg mixture into the rice mixture.
  • Pour into the baking dish and sprinkle with the rest of the Parmesan cheese, 1 tablespoon of sliced almonds, and the remainder of the bacon.
  • Bake for about 30 minutes. Poke with a knife or fork in the center to make sure the egg mixture is cooked through.
