  • 1 package Wellshire Thick Dry Rubbed Bacon
  • 1/2 cup onion minced
  • 1 cup green peppers chopped
  • 10 large eggs room temperature
  • 1 cup milk
  • 1 cup finely shredded cheddar cheese
  • Pinch salt
  • Pinch black pepper


  • Preheat the oven to 350°F.
  • Lay bacon on a baking sheet and bake until crispy. Crumble once cooled.
  • In a greased pan, sauté onions and peppers until tender. Set aside to cool.
  • In a large bowl, whisk eggs and milk. Mix well.
  • Add cheese, bacon, and vegetables to the egg mixture. Add salt and black pepper.
  • Divide the egg mixture into greased ramekins or a muffin tin. Bake in the oven for 15 minutes or until edges are lightly browned.
